6 C warm water
2 T salt
1 C olive oil
1 C dark brown sugar
3 T Wheat Gluten
2 T & 2 t yeast
14 C whole wheat flour (white wheat)
- Combine in mixing bowl warm water and 8 C flour.
- Set aside ½ C warm water and dissolve yeast in it.
- Mix in salt, sugar, oil, gluten and yeast mixture.
- Add additional 6 C flour.
- Mix (knead) for 14 minutes in Bosch.
- Divide dough into four greased loaf pans.
- Cover and raise.
- Cook bread at 350 for 27½ minutes.
For rolls:
- Roll out dough on counter and cut out circles
- Fold the circles in half and place in rows on cookie sheet (24 per pan)
- Cover and raise.
- Cook rolls at 350 for about 20 minutes, or until desired brown.
(This recipe makes about 5 dozen rolls.)
TIP: Vickie uses an upside down glass to cut out rolls and she sprays her counter and rolling pin with olive oil cooking spray.
