1 egg
½ cup milk
¼ cup vegetable oil
1 cup grated apple
1-1/2 cups flour
½ cup sugar
2 tsp. baking powder
½ tsp. salt
½ tsp. cinnamon
Nut-Crunch Topping:
1/3 cup brown sugar
1/3 cup chopped nuts
½ tsp. cinnamon
1. Preheat oven to 400 degrees.
2. Grease bottoms only of muffin cups or use paper baking cups (this makes about 12 muffins).
3. In a mixing bowl beat egg slightly with fork.
4. Measure and stir in milk, vegetable oil, and grated apple.
5. In another mixing bowl measure and blend all dry ingredients.
6. Add all at once to liquid mixture.
7. Stir just enough to moisten dry ingredients. Very important! Just barely stir ingredients – no extra strokes to avoid toughness and tunnels.
8. Fill each up 2/3 full.
9. Top with nut-crunch topping.
10. Bake 20 minutes.
