Butterscotch Brownies

½ cup butter
2 cups brown sugar
2 eggs
1 tsp. vanilla
2 cups sifted flour
2 tsp. baking powder
¼ tsp. salt
1 cup shredded coconut (optional)
1 cup chopped walnuts (optional)

1. In a saucepan combine butter and brown sugar. Cook over low heat until bubbly, stirring constantly. Cool.

2. Add eggs to cooled mixture one at a time, beating well after each.

3. Add vanilla.

4. Sift together dry ingredients.

5. Add with coconut and nuts to brown sugar mixture. Mix thoroughly.

6. Spread in greased 15 ½ x 10 ½ x 1” pan.

7. Bake at 350 degrees for about 25 minutes. Watch carefully – may take only 10-15 minutes.

Icing
1 Tbsp. brown sugar
1 Tbsp. butter, melted
Powdered sugar
Milk

Mix brown sugar with butter. Add powdered sugar and milk until desired consistency. Can be made thin so it’s more of a glaze than an icing.
